1st Crack - The Artisan touch of Roasting
Share
Roasting coffee actually creates over 800 volatile compounds, but one key bit most people miss: the first and second cracks mark distinct chemical stages—first crack is mostly physical (beans expand, moisture pops), while second crack signals rapid polymer breakdown and carbonization, producing darker roast flavors and more surface oils. Roasters control development time between cracks to sculpt acidity, sweetness, and body rather than just aiming for a color.
This matters at CENTAUR Coffee Roasters because we dial in roast development time between cracks for each lot, so origin character isn’t lost under a one-size-fits-all roast.
